Role: Chain of Command is a title that Micheline and Spike gave me partly in truth and partly for fun.When a family is in business together every member of the family feels that they should equally have the right to make every decision. I feel that any success that Harvey & I have had over the years is in our ability to keep asking questions to as many people as we can and constantly strive to learn better ways of doing things. Here in our organization that operates Good Stuff Eatery & We, the Pizza, I constantly tap the very intelligent, talented and creative young individuals that make up "the inner circle of our team." Having said that I always say that every organization needs a "Chain Of Command" that calls the shots, because a ship without a Captain could never stay on course, Hence, I'm it ! Chain of Command
Education: I did my Culinary Studies in Montreux Switzerland from 1969 to 1973I would have to say that both trying to learn as much as I could from my father "Sunny Nakis" a true restaurant guru, and living and breathing food and the restaurant business for 40 years has been my best education. My love affair with this business makes me hungry to learn more everyday, in order to stay current, fresh and on the cutting edge. Whether, we are brainstorming a new concept, or creating a new menu item or building a new restaurant or finding new ways to better our operations, I'm just lovin it.....
Favorite Burger & Shake: A Farmhouse Cheese with our delicious fries and a Black & White Shake made with our daily churned ice cream and homemade fudge
Before Opening Good Stuff Eatery: I always dreamt of creating a simple concept that people would love, and feel good about eating their favorite foods, made with fresh, delicious top of the line ingredients and a lot of TLC where I could bring people and stories alive from the past ("Sunny's Handcut Paper Bag Fries", "Uncle D's Chili" are just a couple of examples.) What made Good Stuff so much fun was that Harvey & I were joined by my cousin Suzy who came to DC for many months during the development phase of the concept, and especially that we were joined by our children Micheline & Spike who brought so many great elements to Good Stuff and whose talents brought the world to Good Stuff and put us over the top.
What is Goodness Gracious: It defines the values of true hospitality in our family, which is something we try to inspire our team to bring to our customers everyday.
Favorite Ingredient to Work With: My two favorite ingredients to work with in the kitchen are Orchard Fresh Lemons & Ruby Red Really Ripe Tomatoes.
If we could give you a time machine, what would you do? If I had a time machine, I would put my husband, children and grandchildren in it and travel back to my childhood to a big family dinner, where they could experience the many past loves of my life including my grandmother Catherine, and her sister my Great Auntie Koula, who both taught me how to cook and how to love. I always wish that my family today could experience the warmth that those memories bring to me everyday of my life.
I would equally want all the people around that table (upwards of 40 of them) to be able to meet the loves of my present life so they could see that their warmth and love of family has been passed on and that their traditions live on in our family today which gives their lives a legacy and keeps the memories of them alive.
